Food Mania: Red Velvlet Cupcakes!

Assalamualaikum, guys!


Frankly speaking, I never bought red velvet cake whenever I went to a bakery. I would order something else like Crème Brulee Cheese or Chocolate Indulgence. I like the taste of the red velvet cake but still it is not my favorite dessert.

But still. I do find red velvet cake sounds luxurious. LOL. I don’t know why. Maybe because of the red colour. Or the velvety texture of the cake. I started to search for the right recipe (right for me means familiar ingredients and I can easily get them). I was still studying medicine at that time. Final year if I was not mistaken.

Instead of baking the whole cake, I put them into small cute cupcakes. I like cute things. LOL. It was a success! Yeay! And I love the taste of the cream cheese melted together with the cupcake. Yummy! I baked about 25 of them and I brought some for my housemates. They love it! And since that day I continued baking red velvet cupcakes for them every time I went home for holidays.

So, this is the recipe that I got from Youtube. I can’t remember whose channel I was watching. Sorry.



Red Velvet Cupcakes!

Ingredients for cupcakes:

250 gram self-rising flour (250 gram all-purpose flour + 1 teaspoon baking powder)
1 teaspoon salt
15 gram cocoa powder (2 tablespoon) – make sure to level the cocoa powder
113 gram unsalted butter (½ of 250 gram butter)
2 eggs (grade A or B)
1 teaspoon vanilla essence
1 cup of plain yogurt
2 tablespoon of red liquid food coloring
1 teaspoon of white vinegar
1 teaspoon of soda bicarbonate


Ingredients for cream cheese frosting:

250 gram Cream cheese
125 gram unsalted butter
2 tablespoon lemon juice ( or soursop juice)
1 teaspoon vanilla essence
2 tablespoon fresh milk ( or full cream milk)
60 gram of sifted icing sugar



Step for cupcakes:

Pre heat oven at 175 degree Celsius. (IMPORTANT!)



 Mix butter and castor sugar until butter become fluffy. It is done when the butter become pale in colour. 



Put in the eggs one by one. Continue mixing the batter.



Meanwhile or after that, mix the red food coloring and yogurt together in another bowl. Mix them until the yogurt is no longer lumpy.


In another bowl, sift the self-raising flour and cocoa powder. Put aside.


Alternately put the flour and yogurt mixture into the batter. Mix them well.

 

In a small bowl, mix the white vinegar and soda bicarbonate until they become foamy. Then immediately mix them into the batter.


Continue mixing the batter using spatula. Do not use electric mixer at this point.


Prepare the cupcake papers.



Fill in the cupcake papers with batter until 2/3 full. 


Bake the cupcakes for 20 minutes in 175 degree Celsius oven.


Check whether the cupcakes are cooked or not by using cake tester or toothpick. It they are cooked, the toothpick will be clean. 
   


   Cream cheese frosting steps:



Take cream cheese. Beat the cream cheese together with butter butter using mixer until soft. 


Put in vanilla extract together with lemon juice or sour sop juice. Continue mixing. 


Then, add in fresh/ full cream milk. 


Finally, mix the icing sugar together. 



Pipe the cream cheese on the top of cupcakes. Decorate with some cupcake's crumble on top.
